Seafood stew

 Seafood stew is a fantastic dish that's both versatile and delicious. Here are a few different recipes to suit various tastes:


### Classic Bouillabaisse



**Ingredients:**

- 2 tbsp olive oil

- 1 onion, chopped

- 2 garlic cloves, minced

- 1 fennel bulb, sliced

- 1 bell pepper, chopped

- 1 can (14.5 oz) diced tomatoes

- 4 cups fish stock or chicken broth

- 1 cup dry white wine

- 1 tsp saffron threads

- 1 tsp dried thyme

- 1 bay leaf

- 1 lb firm white fish (like cod or halibut), cut into chunks

- 1/2 lb shrimp, peeled and deveined

- 1/2 lb mussels, scrubbed

- 1/2 lb clams, scrubbed

- Salt and pepper to taste

- Fresh parsley, chopped, for garnish

- Lemon wedges, for serving


**Instructions:**

1. Heat olive oil in a large pot over medium heat. Add onion, garlic, fennel, and bell pepper. Cook until vegetables are softened.

2. Stir in tomatoes, fish stock, white wine, saffron, thyme, and bay leaf. Bring to a simmer and cook for 15 minutes.

3. Add fish chunks and cook for 5 minutes. Add shrimp, mussels, and clams. Simmer until seafood is cooked through and mussels and clams have opened, about 5-7 minutes.

4. Season with salt and pepper. Garnish with parsley and serve with lemon wedges.


### Portuguese Caldeirada


**Ingredients:**

- 2 tbsp olive oil

- 1 onion, chopped

- 3 garlic cloves, minced

- 2 tomatoes, chopped

- 1 red bell pepper, chopped

- 1 green bell pepper, chopped

- 2 cups fish stock

- 1 cup white wine

- 1 tsp paprika

- 1/2 tsp cayenne pepper (optional)

- 1 bay leaf

- 1 lb potatoes, peeled and sliced

- 1 lb firm white fish (like cod or haddock), cut into chunks

- 1/2 lb squid, cleaned and cut into rings

- 1/2 lb shrimp, peeled and deveined

- Fresh cilantro, chopped, for garnish


**Instructions:**

1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.

2. Stir in tomatoes, bell peppers, and paprika. Cook for a few minutes.

3. Add fish stock, white wine, and bay leaf. Bring to a simmer.

4. Add potatoes and cook for 15 minutes, until just tender.

5. Add fish, squid, and shrimp. Simmer until seafood is cooked and potatoes are tender, about 10 minutes.

6. Garnish with cilantro and serve.


### Spicy Seafood Stew


**Ingredients:**

- 2 tbsp olive oil

- 1 onion, chopped

- 3 garlic cloves, minced

- 1 jalapeño pepper, seeded and chopped

- 1 can (14.5 oz) diced tomatoes

- 4 cups seafood stock

- 1 cup white wine

- 1 tsp smoked paprika

- 1/2 tsp ground cumin

- 1/2 tsp chili flakes (adjust to taste)

- 1 lb firm white fish (like cod or bass), cut into chunks

- 1/2 lb shrimp, peeled and deveined

- 1/2 lb scallops

- 1/2 lb mussels, scrubbed

- Salt and pepper to taste

- Fresh basil, chopped, for garnish


**Instructions:**

1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and jalapeño. Cook until softened.

2. Stir in diced tomatoes, seafood stock, white wine, paprika, cumin, and chili flakes. Bring to a simmer.

3. Add fish and cook for 5 minutes. Add shrimp, scallops, and mussels. Simmer until seafood is cooked and mussels have opened, about 5-7 minutes.

4. Season with salt and pepper. Garnish with basil and serve.
