### Mango Blackberry Cake Recipe

#### Ingredients:

**For the Cake:**

- 1 1/2 cups all-purpose flour

- 1 cup granulated sugar

- 1/2 cup unsalted butter, softened

- 1/2 cup mango puree (fresh or canned)

- 1/4 cup milk

- 2 large eggs

- 1 tsp vanilla extract

- 1 1/2 tsp baking powder

- 1/4 tsp baking soda

- 1/4 tsp salt

- 1 cup fresh blackberries (or frozen, thawed and drained)

**For the Mango Glaze (optional):**

- 1/2 cup mango puree

- 1/4 cup powdered sugar

- 1 tbsp lemon juice

**For Garnish:**

- Additional fresh blackberries

- Mint leaves (optional)

#### Instructions:

1. **Preheat the Oven:**

   - Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.

2. **Prepare the Cake Batter:**

   - In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

   - In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

   - Beat in the eggs one at a time, then mix in the vanilla extract and mango puree until well combined.

   - Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.

   - Gently fold in the fresh blackberries.

3. **Bake the Cake:**

   - Pour the batter into the prepared cake pan and smooth the top.

   - Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

   - Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

4. **Prepare the Mango Glaze (optional):**

   - In a small bowl, whisk together the mango puree, powdered sugar, and lemon juice until smooth. Adjust the sweetness to taste if needed.

5. **Assemble and Garnish:**

   - Once the cake is completely cooled, drizzle the mango glaze over the top.

   - Garnish with additional fresh blackberries and mint leaves, if desired.

6. **Serve:**

   - Slice and serve your Mango Blackberry Cake. It’s perfect on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
