 Tandoori chicken is a classic Indian dish known for its vibrant flavor and smoky taste. It's made by marinating chicken in a blend of yogurt and spices and then cooking it in a tandoor (a traditional clay oven) or a regular oven. Here’s a simple recipe you can follow to make delicious tandoori chicken at home:

Ingredients:

For the Marinade:

  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil or ghee
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon tandoori masala (store-bought or homemade; see recipe below)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika (for color)
  • 1/2 teaspoon turmeric powder

For the Chicken:

  • 4 chicken leg quarters (or any parts of your choice, skinless and bone-in works best)
  • Fresh cilantro or mint leaves (for garnish, optional)
  • Lemon wedges (for serving)

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken pieces and pat them dry with paper towels.
    • Make deep cuts in the chicken pieces so that the marinade can penetrate well.
  2. Make the Marinade:

    • In a large bowl, combine all the marinade ingredients: yogurt, lemon juice, oil, ginger-garlic paste, tandoori masala, cumin, coriander, paprika, turmeric, garam masala, red chili powder, and salt. Mix well until smooth.
  3. Marinate the Chicken:

    • Add the chicken pieces to the marinade, making sure they are thoroughly coated. Massage the marinade into the cuts in the chicken.
    • Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
  4. Preheat the Oven:

    • Preheat your oven to 400°F (200°C). If you have a broiler function, preheat it as well.
  5. Cook the Chicken:

    • Line a baking sheet with aluminum foil or parchment paper. Place a wire rack on top of the baking sheet.
    • Arrange the marinated chicken pieces on the wire rack. This allows the heat to circulate around the chicken, giving it a more even cook.
    • Bake the chicken in the preheated oven for 30-35 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. For a charred effect, switch to the broiler for the last 5 minutes, keeping a close eye to avoid burning.
  6. Serve:

    • Remove the chicken from the oven and let it rest for a few minutes.
    • Garnish with fresh cilantro or mint leaves and serve with lemon wedges on the side.
