GAJRE HALWA

 RECEIPES:

Gajar Halwa, also known as Gajrela, is a popular Indian dessert made with grated carrots, milk, sugar, and ghee. It's a rich, aromatic sweet treat that’s especially enjoyed during the winter months. Here’s a straightforward recipe to make this delicious dessert at home:

Ingredients:

  • 4 cups grated carrots (about 4-5 medium carrots)
  • 4 cups full-fat milk
  • 1 cup sugar (adjust to taste)
  • 1/2 cup ghee (clarified butter)
  • 1/4 cup chopped nuts (such as almonds, cashews, or pistachios)
  • 1/4 cup raisins (optional)
  • 1/2 teaspoon cardamom powder
  • 1/2 teaspoon rose water (optional, for added fragrance)
  • A few saffron strands (optional, soaked in 2 tablespoons warm milk)

Instructions:

  1. Prepare the Carrots:

    • Peel and grate the carrots finely. You should have about 4 cups of grated carrots.
  2. Cook the Carrots:

    • In a heavy-bottomed pan, heat 2 tablespoons of ghee over medium heat.
    • Add the grated carrots and sauté for about 5-7 minutes, stirring occasionally. This helps to release the moisture from the carrots and enhance their flavor.
  3. Add Milk:

    • Pour in the milk and bring the mixture to a boil. Then, reduce the heat to low and let it simmer, stirring occasionally. Cook until the milk is mostly absorbed and the mixture thickens. This will take about 30-40 minutes.
  4. Add Sugar and Ghee:

    • Once the milk is reduced, add the sugar and mix well. The mixture will liquefy again; continue to cook until the liquid evaporates and the mixture thickens further.
    • Stir in the remaining ghee and cook for an additional 5-10 minutes, stirring frequently, until the halwa reaches a pudding-like consistency.
  5. Add Nuts and Flavorings:

    • In a separate small pan, heat a little ghee and lightly roast the chopped nuts and raisins (if using). Add them to the carrot mixture.
    • Stir in the cardamom powder and saffron milk (if using). Mix well.
  6. Finish and Serve:

    • Cook for a few more minutes until everything is well combined and the ghee starts to separate from the mixture.
    • Remove from heat and let it cool slightly before serving.

Serving:

  • Serve Gajar Halwa warm or at room temperature. It can be enjoyed on its own or with a dollop of fresh cream.
